Baby It's Cold Outside?

Even though Mr. Winter has decided to ignore Southern California as of late (it was 80 degrees today), I have been craving cold-weather comfort food. With my oven on the fritz, I'm a bit limited to what I can do - so I decided to make some warm and creamy rice pudding
(it helped that I had rice left over from last night's dinner).

Warm & Creamy Rice Pudding

1 1/2 - 2 cups cooked white rice
2 cups milk, divided
1/3 cup white sugar
1/4 teaspoon salt
1 egg, beaten
2/3 cup golden raisins
1 - 2 tablespoons butter
1/2 teaspoon vanilla extract
ground cinnamon, to taste

In a saucepan, combine cooked rice, 1 1/2 cups milk, sugar and salt. Cook over medium heat until thick and creamy, 15 to 20 minutes. Stir in remaining 1/2 cup milk, beaten egg and raisins. Cook 2 minutes more, stirring constantly. Remove from heat, and stir in butter, vanilla and cinnamon.
Serve warm.

Serves 4.

My guys don't like raisins in their rice pudding, so I left them
out. We like to top ours with a dollop of whipped cream
or pour of bit of heavy cream over the top.
